Producer Profile
Based in the heart of the Languedoc in Lezignan-Corbières, Domaines Auriol is a family-owned winery set up in 1995 by the formidable Claude Vialade. As the daughter of a former wine estate manager, wine has always been second nature to Claude from early days where she would follow her father around the vineyards as a child to becoming the Director of the AOC Corbières Syndicate. Today Domaines Auriol is a producer as well as a négociant who prides itself in its Occitan roots. Their Estates and Family brands are great examples of the best wines this part of the Languedoc has to offer.
Viticulture
The vineyard is managed in Cordon de Royat and Guyot to allow maximum aeration of the bunches. Part of the vineyard is irrigated to respond to the water stress suffered by the vines. The vineyard is managed and certified in Organic Agriculture.
Winemaking
The harvest takes place at night, to avoid the high temperatures. of the day. The grapes undergo, within the presses, a maceration short (2 to 4 hours). Pressing is followed by settling which allows extract a clear juice which is then yeasted. The alcoholic fermentation made at moderate temperature (14 – 16°C) for about 15 days.
