Producer Profile
Based in the heart of the Languedoc in Lezignan-Corbières, Domaines Auriol is a family-owned winery set up in 1995 by the formidable Claude Vialade. As the daughter of a former wine estate manager, wine has always been second nature to Claude from early days where she would follow her father around the vineyards as a child to becoming the Director of the AOC Corbières Syndicate. Today Domaines Auriol is a producer as well as a négociant who prides itself in its Occitan roots. Their Estates and Family brands are great examples of the best wines this part of the Languedoc has to offer.
Viticulture
Our partner cellars cultivate around fifty hectares from a single grape variety "Piquepoul". It is a very late variety which retains a very nice natural acidity even in hot years. THE yield is 60hl maximum per hectare.
Winemaking
Parcel selection, selection at the quay, enzymation at the reception, pre-fermentation maceration at 8°C for 6 hours, static settling, alcoholic fermentation at low temperature. THE vinification protocols are adapted for the production of the cuvées of Picpoul on acidity and aromas. Other cuvées are stirred to develop the structure. The assembly of the final cuvées is done on tasting before bottling.
